Cheesy enchilada stuffed poblano chiles are a delectable treat!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 1/3 cups milk
  • 2 1/4 cups hot water
  • 1 box Hamburger Helper™ crunchy taco
  • 6 large poblano chiles
Instructions:
  • Cook the beef in a 10-inch nonstick skillet over medium-high heat until browned; drain. Add 1 cup of milk, hot water, sauce mix, and uncooked rice from the Hamburger Helper box. Bring to a boil, stirring occasionally.
  • Lower the flame, cover the pot, and let it simmer gently for about 20 minutes, giving it an occasional stir until the rice is tender. While that's cooking, preheat the oven to 350°F.
  • For smoky flavor, grill chiles over gas flame or in a hot skillet until skins blister, about 5 minutes. Let chiles steam in a plastic bag for easy peeling. Rinse under cold water, remove seeds, and open them up.
  • Stuff each chile with the rice mixture and arrange them in a 13x9-inch glass baking dish without greasing.
  • Bake until chiles are soft, typically for 13 to 15 minutes. While waiting, mix the remaining milk and topping mix in a bowl. Once the chiles are done, generously top them with the mixture and sprinkle with corn chips from the Hamburger Helper box.
