Indulge in cheesy stuffed poblanos with zesty tomato sauce – a delicious Mexican side dish!
Ingredients:
  • 6 large poblano chiles
  • 18 strips (3x1 inch) queso fresco or mozzarella cheese
  • 3/4 cup shredded mozzarella cheese (3 oz)
  • Mexican-style cream
  • 2 lb plum (Roma) tomatoes, cut in half
  • 1/2 medium onion, cut in half
  • 2 cloves garlic, peeled
  • 1 small serrano chile, seeded
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon vegetable oil
  • 3/4 teaspoon salt
Instructions:
  • Preheat oven to 350F. Char the chiles on a high gas flame or skillet until blackened. Let them steam in a plastic bag for 5 minutes, then easily peel them under cold running water.
  • Cut open one side of the poblano peppers and remove the seeds. Stuff each poblano with 3 strips of cheese, then top each pepper with approximately 2 tablespoons of shredded mozzarella cheese. Arrange the stuffed poblanos in a 9x13-inch glass baking dish.
  • Bake chiles until cheeses are melted and chiles are soft, about 15-20 minutes.
  • Prepare the tomato sauce by blending all sauce ingredients in a food processor or blender until smooth. Transfer the sauce to a 2-quart saucepan and cook over medium-high heat for about 15 minutes until it is slightly reduced and turns a rich dark red color.
  • Plate tomato sauce, place stuffed poblano chile on top, and drizzle with Mexican-style cream for a delicious presentation.
