Spicy chorizo and rice stuffed poblanos – a twist on classic stuffed peppers with a kick!
Ingredients:
  • 1 teaspoon olive oil
  • 0.75 pound bulk chorizo sausage
  • 0.5 cup cooked rice
  • 0.25 cup diced onion
  • 0.25 cup taco sauce
  • 0.25 cup shredded Cheddar cheese
  • 1 teaspoon ground cumin
  • 2 poblano peppers, halved lengthwise and seeded
  • 2 tablespoons taco sauce, or to taste
  • 0.25 cup water
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • In a skillet over medium-high heat, sizzle chorizo in olive oil until crispy and crumbled, about 7 to 10 minutes. Take the skillet off the heat, then mix in rice, onion, 1/4 cup taco sauce, Cheddar cheese, and cumin until well combined.
  • Stuff poblano pepper halves with the flavorful chorizo mixture, then arrange them in a cozy casserole dish or a charming pie pan. Generously drizzle 1 tablespoon of zesty taco sauce over each pepper. Add water to the dish, then cover gently with foil.
  • Roast in a preheated oven until peppers are soft, for approximately 1 hour.
