Chorizo-stuffed pork roast

Elevate roast pork with flavorful chorizo stuffing.
Ingredients:
  • 3kg Pork Leg Roast Bone In
  • 1 chorizo sausage, finely chopped
  • 20.00 ml flat-leaf parsley, finely chopped
  • 20.00 ml basil, finely chopped
  • 36.40 gm olive oil
  • 2.40 gm sea salt
  • 1kg orange sweet potato, cut into 4cm pieces
  • Steamed green beans, to serve
  • Lemon wedges, to serve
  • Finely chopped basil, extra, to sprinkle
Instructions:
  • Preheat the oven to 230C. Pat the pork dry with paper towel, then score the rind with a sharp knife at 2cm intervals. Transfer the pork to a large roasting pan.
  • Mix together the chorizo, parsley, and basil in a small bowl. Fill the cuts in the pork with the flavorful chorizo mixture. Finish by drizzling with oil and sprinkling with salt.
  • Roast the pork at 180C for 2 1/2 hours, adding sweet potatoes to the pan for the last 50 mins. Cover with foil if over-browning.
  • Enhance the sweet potato with an extra sprinkle of basil. Serve the pork alongside the sweet potato, green beans, and lemon wedges.
