Chorizo-Stuffed Pork Tenderloin

Chorizo-stuffed pork tenderloin with ginger-lime marmalade - a flavor explosion!
Ingredients:
  • 1 pound (16 ounces) pork tenderloin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 ounces (1/2 cup) ground chorizo sausage
  • 1 1/2 tablespoons olive oil
  • 1/4 cup ginger lime marmalade or your favorite marmalade
Instructions:
  • Preheat your oven to 450°F. Butterfly the tenderloin to lay it out flat, then place it between large pieces of plastic wrap. Use a meat tenderizer to pound the tenderloin until it is 1/4-inch thick.
  • Season both sides of the tenderloin generously with salt and pepper. Spread the chorizo evenly down the center of the tenderloin, leaving a 2-inch border on all sides. Roll up the tenderloin tightly and secure with kitchen string.
  • Heat a large sauté pan over high heat and add oil. Sear the trussed tenderloin on all sides until a golden crust forms.
  • Place the skillet in the preheated oven and bake until the internal temperature reaches 160°F, about 12-16 minutes.
  • After removing the trussing, elegantly slice the tenderloin on a bias. Arrange the slices on a platter and generously drizzle them with marmalade. Serve promptly to enjoy at its best.
