Try our delicious Chorizo-Stuffed Sweet Potatoes for a flavorful twist on stuffed potatoes. Roasted sweet potatoes filled with spicy chorizo, tangy cotija cheese, peppers, and onions.
Ingredients:
  • 4 medium sweet potatoes
  • 2 green or red bell peppers, sliced
  • 1 medium yellow onion, sliced
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon chili powder
  • 1 (14-ounce) package fresh chorizo, casings removed
  • Cotija cheese, for sprinkling, to taste
  • Chopped cilantro, for sprinkling, to taste
Instructions:
  • Prepare the sweet potatoes for baking: Preheat the oven to 400°F. Rinse the potatoes well under running water to remove any dirt. Use a fork to pierce the potatoes all over, then place them on a baking sheet. Bake until tender and easily pierced with a fork, approximately 1 hour, adjusting the time based on the size of the potatoes.
  • Create the chorizo filling: Heat oil in a large skillet over medium heat. Sauté peppers, onions, salt, and chili powder until vegetables are softened (about 15 minutes). Add chorizo and cook, breaking it up with a wooden spoon until fully cooked (about 10 minutes).
  • Prepare the sweet potatoes: Slice each sweet potato in half lengthwise, creating a pocket shape by gently separating the ends. Fill each sweet potato with the delicious chorizo mixture, top with cheese and fresh cilantro, and enjoy. Store any leftovers in the refrigerator for a few days.
