Spicy chorizo and sweet apple relish stuffed hot dogs.
Ingredients:
  • 9.20 gm olive oil
  • 1 chorizo, finely chopped
  • 1 large red onion, halved, thinly sliced
  • 1 long fresh red chilli, thinly sliced
  • 1 Granny Smith apple, peeled, cut into 1cm pieces
  • 10.00 gm brown sugar
  • 250ml (1 cup) apple cider
  • 6 traditional English pork sausages
  • 6 crusty sourdough rolls, warmed
  • Baby rocket, to serve
  • American mustard, to serve
Instructions:
  • Heat oil in a frying pan over medium-low heat. Cook chorizo for 4 minutes until golden. Transfer to paper towel-lined plate. Add onion and chili to the pan, cook for 5 minutes until soft. Add apple, cook for 5 more minutes until soft. Stir in sugar for 2 minutes until lightly caramelized. Add cider and chorizo, simmer for 15 minutes until liquid evaporates. Season with pepper.
  • Place sausages in a large non-stick frying pan over medium-low heat. Cook, turning occasionally, for 15-17 minutes until fully cooked.
  • Carefully slice the rolls in half down the center without cutting all the way through. Layer with rocket, a sausage, and relish, then finish with a drizzle of mustard.
