Elevate your BBQ game with spicy kimchi slaw hot dogs! Perfect for using up leftover kimchi or trying something new. Ideal for weeknight dinners or entertaining guests.
Ingredients:
  • For the Kimchi Slaw:
  • 1 cup kimchi , minced
  • 1 medium carrot, grated
  • 1 cup grated daikon radish
  • 4 scallions, white and light green parts chopped
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • For the Spicy Gochujang Sauce:
  • 1/2 cup mayonnaise
  • 3 to 4 tablespoons Gochujang Korean Chili Paste
  • Juice of 1/2 lime
  • For the hot dogs:
  • 8 all-beef hot dogs
  • 8 hot dog buns
Instructions:
  • Prepare the slaw: Combine minced kimchi, grated veggies, scallions, cilantro, and salt. Allow the mixture to rest for a minimum of 10 minutes to enhance the flavors. Adjust seasoning with more salt if desired. The slaw can be made a day ahead and refrigerated, covered. Avoid preparing it too far in advance to maintain its freshness.
  • Prepare the zesty chili-mayo sauce by blending 3 tablespoons of Gochujang chili paste with mayonnaise and a splash of fresh lime juice. Adjust the spice level to your liking by tasting and adding more chili paste if desired.
  • Grill the hot dogs and buns: Preheat a gas or charcoal grill to medium heat (around 350°F). Grill the hot dogs for 4 to 5 minutes, turning once, until they develop grill marks. Toast the buns for 30 seconds for a slight crispiness.
  • Presentation: Place a generous portion of slaw on top of each hot dog and drizzle with sauce right before enjoying while still hot!
