Transform ordinary carrots into a sweet and spicy Mediterranean dip, a delightful alternative to hummus. Pair with pita bread or chips for a flavorful experience.
Ingredients:
  • 1 pound carrots, peeled and thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 (2 inch) piece fresh ginger root, peeled and thinly sliced
  • 0.75 teaspoon salt, divided
  • 0.33333334326744 cup apricot preserves
  • 2 tablespoons fresh lemon juice
  • 4 teaspoons toasted sesame oil
  • 1.5 teaspoons ground coriander
  • 0.125 teaspoon cayenne pepper
Instructions:
  • In a large saucepan, combine carrots, garlic, ginger, and 1/4 teaspoon salt. Pour in enough water (about 2 cups) to cover the ingredients. Bring to a boil, then lower the heat and simmer covered until carrots are tender, about 10 to 12 minutes. Drain the vegetables before using.
  • Blend the carrot mixture in a food processor with the remaining 1/2 teaspoon of salt, apricot preserves, lemon juice, sesame oil, coriander, and cayenne until nearly smooth.
