Flavorful Moroccan carrot salad enhances any meal.
Ingredients:
  • 4 bunches baby Dutch carrots, peeled, tops trimmed to 2.5cm
  • 125ml olive oil
  • 85ml red wine vinegar
  • 40.00 ml sweet pimenton (smoked paprika)*
  • 20.00 gm ground cumin
  • 3 garlic cloves, crushed
  • 40.00 ml finely chopped flat-leaf parsley
Instructions:
  • Boil the carrots in lightly salted water for 5 minutes, then chill in cold water and drain. Mix olive oil, red wine vinegar, pimenton, cumin, and garlic. Season with salt and pepper. Coat the carrots in the dressing and let sit for 4 hours to marinate.
  • Combine the parsley with the carrots, then arrange on a platter for serving.
