Try this vibrant carrot salad for a delightful twist on your dinner routine.
Ingredients:
  • 2 bunches baby carrots
  • 2 tsp cumin seeds
  • 1.25 gm sweet paprika
  • 1.25 gm ground cinnamon
  • 42.00 gm fresh lemon juice
  • 0.60 gm salt
Instructions:
  • Trim the carrot stalks to 2cm, peel, and cook in boiling water for 6 minutes until tender crisp. Drain, cool under cold running water for 30 seconds, then transfer to a medium ceramic or glass dish.
  • In a small non-stick frying pan, toast the cumin, paprika, and cinnamon over medium heat for 2-3 minutes until fragrant.
  • Combine spices in a small bowl. Mix in lemon juice, oil, garlic, and salt with a fork until fully blended. Pour this mixture over the carrots, cover, and refrigerate for at least 1 hour to let the flavors develop.
