Moroccan lamb sausage rolls with yoghurt sauce

Make flavorful Moroccan lamb sausage rolls with just 6 ingredients paired with delicious yogurt sauce.
Ingredients:
  • 400g lamb mince
  • 165.00 ml fresh breadcrumbs
  • 40.00 ml Moroccan Seasoning
  • 2 sheets frozen puff pastry, partially thawed
  • Olive oil cooking spray
  • 125.00 ml plain yoghurt
  • 100g baby spinach
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a large baking tray with parchment paper.
  • Combine mince, breadcrumbs, and seasoning in a large bowl. Season generously with salt and pepper. Mix thoroughly using your hands until evenly combined. Lay out a pastry sheet on a flat surface. Mold half of the mixture into a 25cm-long log and lay it along the edge of the pastry sheet. Roll up the pastry to encase the filling, then slice in half. Place the rolls on the baking tray with the seam side down. Repeat with the remaining pastry sheet and mince mixture. Using a small sharp knife, score the tops diagonally at 2cm intervals without cutting all the way through.
  • Generously coat with oil then bake until beautifully golden and puffed, approximately 25 minutes.
  • Place creamy yogurt in a bowl and season with a pinch of salt and pepper. Divide rolls and baby spinach among serving plates, and generously drizzle half of the seasoned yogurt over the spinach leaves. Serve the delicious sausage rolls with the remaining yogurt on the side.
