Spicy sausage sandwich upgrade.
Ingredients:
  • 2 carrots, cut into long matchsticks
  • 62.50 ml fresh mint leaves
  • 2 green onions, sliced
  • 27.20 gm sultanas
  • 40.00 ml pistachio kernels, roughly chopped
  • 40.00 ml apple cider vinegar
  • 82.50 ml plain reduced-fat Greek-style yoghurt
  • 2 tsp harissa Middle Eastern spice blend, plus extra to sprinkle
  • 28.60 gm honey
  • 9.20 gm extra virgin olive oil
  • 4 thick lamb sausages
  • 4 green oak lettuce leaves, torn
  • 4 long crusty bread rolls, split (see note)
Instructions:
  • Combine carrot, mint, onion, sultanas, pistachios, and vinegar in a bowl, toss gently to mix. In a separate bowl, swirl half of the spice blend into the yogurt.
  • Mix honey and the rest of the spice blend in a bowl. Heat oil in a large non-stick pan over medium heat. Add sausages and cook for 10 minutes, turning and brushing with the honey mixture until browned and cooked through.
  • Divide the lettuce, carrot mixture, and sausages evenly among the rolls. Top them with the yogurt mixture and sprinkle with extra spice blend.
