This aromatic couscous salad with mint, coriander, and tomato enhances the Moroccan-spiced pork perfectly.
Ingredients:
  • 18.20 gm Brand Pure Olive Oil
  • 4 Pork Sirloin Steaks
  • 20.00 ml Moroccan seasoning
  • 375.00 ml Brand Couscous
  • 375.00 gm boiling water
  • 200g green beans, trimmed, chopped
  • 200g punnet Perino tomatoes, halved
  • 125.00 ml mint leaves, chopped
  • 125.00 ml coriander, chopped, plus extra sprigs to serve
  • 64.38 gm Brand French Dressing
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high. Coat the pork with oil and generously sprinkle with Moroccan seasoning. Grill for 3-4 minutes on each side, or until perfectly cooked.
  • Set aside the couscous in a heatproof bowl and cover it with 1 1/2 cups of boiling water. Let it sit for 5 minutes until all the liquid is absorbed. Fluff the grains with a fork. Boil the beans in a saucepan for 2-3 minutes until tender. Drain them before using.
  • Combine beans, tomatoes, mint, coriander, and dressing with the couscous, toss well to mix, season to taste, and serve with pork garnished with extra coriander.
