Indulge in exotic Moroccan pork with flavorful spiced lentils.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g Diced Pork
  • 10.00 gm Moroccan Spice Mix
  • 375ml chicken stock
  • 21.00 gm lemon juice
  • 1 tsp ground coriander
  • 22.20 gm tomato paste
  • 400g can Brand brown lentils, rinsed, drained
  • 300g butternut pumpkin, peeled, seeded, cut into 1cm pieces
  • 100g baby spinach leaves
Instructions:
  • In a deep, medium frying pan over medium-high heat, heat half of the oil. Sauté half of the onion and half of the garlic for 5 mins until soft. Add the pork and cook for 3-4 mins until light brown, stirring occasionally.
  • Sprinkle in the exotic Moroccan spice and let it infuse for 1 minute until aromatic. Pour in 1/2 cup (125ml) stock and bring to a lively boil. Reduce heat to low, cover, and gently simmer for 15 minutes. Uncover and continue simmering for another 10 minutes until the pork is tender. Finish by swirling in the refreshing lemon juice into the savory pork mixture.
  • Heat the rest of the oil in a medium saucepan over medium-high heat. Sauté the remaining onion and garlic until soft, about 5 minutes. Stir in coriander and cook for 1 minute until fragrant. Add tomato paste and the rest of the stock, bring to a boil. Mix in lentils and pumpkin. Reduce heat to low, cover, and simmer for 12-15 minutes until pumpkin is tender. Stir in spinach and cook for 2 minutes until wilted.
  • Plate the lentil mixture and pork mixture using a slotted spoon. Finish with a drizzle of pan juices before serving.
