Quick-rise yeast makes this challah bread recipe fast and stunning, with a glossy finish.
Ingredients:
  • 4 (.25 ounce) packages quick-rise yeast
  • 4 cups warm water (110 degrees F/45 degrees C)
  • 2 tablespoons salt
  • 1 cup pareve margarine, melted
  • 4 eggs
  • 12 cups bread flour, or as needed
  • 0.5 teaspoon vanilla extract
  • 0.25 cup sesame seeds, divided
Instructions:
  • In a large bowl, sprinkle yeast over water and gently stir to moisten. Add salt, sugar, margarine, and 4 eggs, then beat well. Gradually mix in flour, 1 cup at a time up to 12 cups, until dough is slightly tacky but not wet. Turn dough onto a floured surface and knead until smooth and elastic for 8 to 10 minutes.
  • Prepare your baking sheets by greasing them or lining them with parchment paper.
  • Divide the dough into 4 equal pieces (or 2 pieces for larger loaves). Then, cut each piece into thirds for braiding. On a floured surface, roll the dough pieces into ropes about 12 inches long, thicker in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them by alternately moving the outer strands over the middle one until fully braided. Pinch the ends together and tuck them underneath for a tidy finish. Repeat for the rest of the dough pieces.
  • Place the loaves on the prepared baking sheets and let them rise until double in size, which should take about 1 to 1 1/2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, whisk together 1 egg and vanilla extract. Brush the loaves with the egg wash and then sprinkle each with approximately 1 tablespoon of sesame seeds.
  • Place the dish in the oven that has been preheated until the tops are shiny and golden brown, which should take around 30 minutes. Allow the dish to cool before cutting into slices.
