Whip up easy, lightly sweetened pecan pancake muffins for a kid-friendly breakfast on-the-go!
Ingredients:
  • 2 cups self-rising flour
  • 0.5 cup white sugar
  • 0.5 cup chopped pecans, or to taste
  • 0.25 cup brown sugar
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C).
  • In a bowl, blend flour, white sugar, pecans, brown sugar, egg, and oil until well combined. Scoop batter into muffin tin cups, filling each 2/3 full.
  • Bake in the oven until the tops spring back when lightly pressed, for 8 to 12 minutes.
