Sautéed onions, garlic, ginger, pork, bok choy, and mushrooms make a delicious filling for tortilla wraps.
Ingredients:
  • 12 ounces lean boneless pork loin, sliced into 1/4 inch thick strips
  • 1 onion, thinly sliced
  • 0.25 cup minced fresh ginger root
  • 2 cloves garlic, minced
  • 4 cups thinly sliced bok choy
  • 1 red bell pepper, sliced
  • 10 large white mushrooms, julienned
  • 4 cups bean sprouts
  • 0.25 cup sake
  • 3 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 8 (8 inch) flour tortillas
Instructions:
  • Preheat the oven to 325°F (165°C) and wrap the tortillas in foil.
  • Preheat a large skillet over high heat until sizzling hot. Add pork, onion, ginger, and garlic; sauté until pork is browned and onion is tender, approximately 5 minutes. Stir in bok choy, red bell pepper, and mushrooms; cook until bell pepper is tender-crisp, for about 5 minutes. Take the pan off the heat.
  • Warm tortillas in the oven for about 8 minutes.
  • Return the pan to high heat and stir in the bean sprouts, sake, hoisin sauce, and soy sauce. Cook and stir until the bean sprouts are tender-crisp, approximately 5 minutes.
  • Take the warm tortillas out of the oven. Fill each tortilla with the savory pork mixture and roll them up. Enjoy immediately.
