Try Asian-inspired Bisquick® pancakes filled with sprouts, mushrooms, and coleslaw for a quick dinner option in just 30 minutes!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 bag (16 ounces) coleslaw mix
  • 1 bag (8 ounces) fresh bean sprouts
  • 1 package (8 ounces) sliced mushrooms
  • 1 tablespoon grated gingerroot
  • 3 tablespoons hoisin sauce
  • 1 1/4 cups Bisquick™ Original baking mix
  • 1 1/4 cups milk
  • 1 egg
  • 8 green onions, chopped (1/2 cup)
  • Additional hoisin sauce
Instructions:
  • In a 4-quart Dutch oven, heat oil over medium-high heat. Sauté coleslaw mix, bean sprouts, mushrooms, and ginger for about 10 minutes until vegetables are tender. Mix in 3 tablespoons of hoisin sauce, reduce the heat, and keep warm.
  • Combine baking mix, milk, and egg in a medium bowl, and whisk until smooth. Mix in the onions.
  • Grease a 10-inch skillet and heat it over medium-high heat. Pour a little less than 1/4 cup batter into the skillet, swirl to create a 5 to 6-inch pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Keep warm and repeat with the rest of the batter to make more pancakes.
  • Place a generous 1/3 cup of the flavorful vegetable mixture in the center of each pancake, then delicately roll them up. Enhance the experience by serving with extra hoisin sauce on the side.
