Savory breakfast casserole with broccoli, ham, and gooey Cheddar cheese baked into fluffy eggs.
Ingredients:
  • 4 potatoes, peeled and cubed
  • 1 head broccoli, cut into florets
  • 1.5 cups cooked ham, cubed
  • 8 eggs, beaten
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish to prepare for baking.
  • In a hot oiled skillet, sauté the potatoes for 10 minutes until golden brown. Transfer to the bottom of the prepared pan.
  • Saute broccoli and onions in butter until soft, then spoon over potatoes and top with ham.
  • Combine eggs and cheese in a large bowl, season with salt and pepper, then pour the mixture over the vegetables.
  • Bake in a preheated oven until the eggs are cooked through and the top is golden brown, approximately 20-30 minutes. Serve while warm.
