Vibrant and flavorful colorful salad.
Ingredients:
  • 2 blood oranges
  • 1 pomegranate
  • ½ a lemon
  • extra virgin olive oil
  • 100 g rocket
  • a few sprigs of fresh mint
  • 4 small balls of mozzarella (125g total)
  • 30 g creamy pecorino cheese
Instructions:
  • Peel the oranges with a knife and slice them in half horizontally, removing any pith and breaking them into chunks. Cut the pomegranate in half and gently tap out the seeds into a bowl, discarding any white bits. Juice the lemon into a jar and add 3 tablespoons of oil and a pinch of sea salt to make a dressing. Shake well to combine. Toss the mint leaves with rocket and orange in the dressing and divide onto plates. Tear the mozzarella over the salads, sprinkle with black pepper, pomegranate seeds, and pecorino curls. Finish with a drizzle of oil and serve.
