Garlic-infused mozzarella-stuffed baked chicken.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • 0.25 cup butter
  • 4 slices mozzarella cheese
  • 1 egg, beaten
  • 2 cups all-purpose flour for coating
  • 1 cup seasoned dry bread crumbs
  • 2 teaspoons minced garlic
  • 1 cup dry white wine
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Place the chicken breasts between two sheets of wax paper and gently pound each to a 1/4 inch thickness. Spread butter or margarine on the inside of each breast, then season with salt and pepper to your liking.
  • Place a slice of cheese on each chicken breast, roll them up, and secure with toothpicks. In separate bowls, coat the rolled breasts in flour, egg, and breadcrumbs. Arrange the coated breasts in a lightly greased 9x13 inch baking dish.
  • For the Sauce: Melt 1/4 cup of butter in a saucepan, then toss in garlic followed by wine. Allow everything to simmer. Pour the flavorful sauce over the chicken and bake in a preheated oven for 30 to 45 minutes.
