Mozzarella-Stuffed Chicken Parmesan Meatloaf

Mozzarella-stuffed chicken Parmesan meatloaf - a delicious twist on a classic favorite.
Ingredients:
  • 2 tablespoons olive oil
  • 1 cup diced onions
  • 3 cloves finely chopped garlic
  • 1 1/2 lb ground chicken
  • 1 cup Progresso™ panko crispy bread crumbs
  • 1/4 cup milk
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes, if desired
  • 6 oz mozzarella cheese, cut into planks
  • 1 cup marinara sauce
  • 1/2 cup Progresso™ panko crispy bread crumbs
  • 1 clove finely chopped garlic
  • 2 tablespoons butter
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Preheat the oven to 400°F and generously coat a 9x5-inch loaf pan with cooking spray.
  • Heat 1 tablespoon of oil in an 8-inch skillet over medium-high heat. Cook onions, 3 cloves of garlic, and a dash of salt for about 5 minutes until onions are soft and translucent. Allow to cool before using.
  • Combine the remaining olive oil, ground chicken, bread crumbs, milk, egg, Parmesan cheese, parsley, salt, pepper, and pepper flakes in a large bowl. Mix in the onion and garlic mixture until well combined.
  • Spread half of the meatloaf mixture in the pan. Lay cheese planks down the center with a small border around the edges. Cover the cheese with the remaining meatloaf mixture, pressing to seal in the cheese. Spread half of the marinara sauce over the top.
  • Bake for around 1 hour until a meat thermometer inserted in the center of the loaf reads 165°F. Let it cool for 10 to 15 minutes. While waiting, toast 1/2 cup bread crumbs, 1 clove garlic, and butter in a 6-inch skillet until golden. Transfer the mixture to a small dish to cool slightly, then stir in 3 tablespoons Parmesan and 2 tablespoons parsley. Sprinkle this topping over the meatloaf.
  • Drizzle with the rest of the marinara sauce before serving.
