Asparagus and mozzarella stuffed chicken breasts, crispy outside, tender inside, ready in under an hour.
Ingredients:
  • 2 large skinless, boneless chicken breast halves
  • salt and black pepper to taste
  • 8 asparagus spears, trimmed - divided
  • 0.5 cup shredded mozzarella cheese, divided
  • 0.25 cup Italian seasoned bread crumbs
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and grease an 8-inch square baking dish.
  • Place a chicken breast between two sheets of heavy plastic on a sturdy surface. Gently pound the chicken to an even thickness of about 1/4 inch using a meat mallet. Season both sides with salt and pepper.
  • Lay four asparagus spears in the middle of each chicken breast and add mozzarella on top. Roll up the chicken tightly to create neat rolls. Arrange the chicken with the seam side down in the baking dish and sprinkle bread crumbs over them.
  • Cook in the preheated oven for approximately 25 minutes, until the center is no longer pink and the juices run clear. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C) by using an instant-read thermometer.
