Elevated asparagus pasta bake with rich ricotta and mozzarella cheese for a creamy twist on classic baked ziti.
Ingredients:
  • 1 pound ziti pasta
  • 1 (15 ounce) container ricotta cheese
  • 1 (28 ounce) jar tomato sauce, divided
  • 2 cups finely shredded mozzarella cheese, divided
  • 0.33333334326744 cup chopped fresh parsley
  • 0.5 pound asparagus, trimmed
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 large red bell pepper, diced
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Boil ziti in a pot of salted water for 8 minutes until al dente. Drain and transfer to a large bowl.
  • Combine ricotta cheese, 1 1/2 cups tomato sauce, 1 cup mozzarella cheese, and parsley with drained pasta. Mix well and let it rest.
  • Slice the trimmed asparagus into 1/4-inch pieces, keeping the stems and tips separate.
  • Heat oil in a pan over medium-high heat. Saute onion for 5 minutes, then stir in asparagus stems for another 3 minutes. Add bell pepper and cook for 2-3 minutes before adding asparagus tips to cook for an additional 2-3 minutes.
  • Start by coating a 9x13-inch baking dish with 1 cup of tomato sauce. Layer in half of the pasta mixture and spread it evenly. Sprinkle half of the vegetables on top, then add 1/2 cup of mozzarella cheese. Repeat with the remaining pasta, vegetables, and top with the remaining tomato sauce. Finish by sprinkling the remaining mozzarella cheese on top.
  • Place your dish on the middle rack in the preheated oven for 30 minutes until bubbly. Then, move it to the top rack for an additional 5 minutes until the cheese is melted. Allow it to stand for 5 to 10 minutes before serving.
