Spring asparagus baked with gooey mozzarella and crispy panko breadcrumbs - a delightful side dish.
Ingredients:
  • 1 lb. trimmed asparagus
  • 2 Tbsp. extra-virgin olive oil
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ¼ cup panko bread crumbs
  • ½ tsp. crushed red pepper
  • 1 (8-oz.) ball fresh mozzarella, cut into 1/4-inch-thick slices
Instructions:
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • 1. Place asparagus in a baking dish in a single layer. Drizzle with 1 tablespoon of extra-virgin olive oil and toss gently to coat. Sprinkle with salt and black pepper. Broil for 6 to 8 minutes until just tender, adjusting based on thickness.
  • While the asparagus cooks, combine panko bread crumbs, 1 tablespoon of extra-virgin olive oil, and crushed red pepper in a small bowl. Layer mozzarella slices over the asparagus, slightly overlapping them. Sprinkle the panko mixture evenly over the cheese. Broil until the cheese is melted and bubbly, approximately 1 minute.
