Delicious Easter leftovers strata - a simple one-pan dish with dinner rolls, veggies, and optional mozzarella. Great for breakfast or brunch!
Ingredients:
  • 4 cups asparagus, trimmed and cut into 1 inch pieces
  • 12 dinner rolls
  • 1.5 cups diced processed American cheese
  • 2.5 cups cooked ham, coarsely chopped
  • 6 eggs
  • 3 cups milk
  • 3 tablespoons minced onion
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • If using raw asparagus, set up a steamer basket over two cups of water in a small stock pot. Bring the water to a boil, add the asparagus, and cook for about 5 minutes until tender yet firm. Drain and allow to cool.
  • Prepare a 9x13 inch baking dish by lightly greasing it. Halve the dinner rolls and set the tops aside. Tear the bottom halves of the rolls into pieces and spread them evenly in the pan. Layer the asparagus, cheese, and ham over the bread pieces. Lastly, arrange the remaining tops of the rolls on top of the other ingredients.
  • Combine eggs, milk, onion, salt, and pepper until smooth. Pour mixture into a pan and chill overnight.
  • Take the pan out of the refrigerator 30 minutes before baking and preheat the oven to 350°F (175°C).
  • Bake without a cover until a knife inserted in the center comes out clean, for approximately 55 minutes. Allow it to rest for about 10 minutes before slicing.
