Create a delicious choc-mint bombe with only 5 ingredients – no baking required! Topped with Peppermint Crisps and lined with choc ripple biscuits for a quick and impressive dessert.
Ingredients:
  • 2 x 250g pkts Arnott’s Choc Ripple biscuits
  • 1L tub milk chocolate ice-cream
  • 1L tub mint & cookies ice cream
  • 1 x 220g bottle Cottee’s Ice Magic
  • 2 x 35g Nestlé Peppermint Crisp, coarsely chopped
Instructions:
  • Grease a 2L (8 cup) pudding basin and line it with plastic wrap, leaving an overhang. Place biscuits around the inside, then spread one-third of the milk chocolate ice-cream evenly over the base. Add another layer of biscuits on top.
  • Add scoops of refreshing mint ice cream onto the biscuit layer and spread it evenly. Place another layer of biscuits on top. Spoon the rich chocolate ice cream over them and smooth the surface. Add another layer of biscuits, saving any extras for later use. Cover with plastic wrap, ensuring it overhangs, and let it set in the freezer for at least 6 hours or overnight.
  • Invert bombe onto a serving plate, discard plastic wrap, drizzle Ice Magic over the top, sprinkle with chopped Peppermint Crisp, and enjoy right away.
