Delicious and nutritious family-friendly sweet slice.
Ingredients:
  • 110g (1/2 cup) raw sugar
  • 60ml (1/4 cup) honey
  • 200g pepitas (pumpkin seeds)
  • 1 Weet-Bix™, crushed
  • 90g (1/2 cup) sultanas
  • 50g (1/2 cup) rolled oats
  • 75g (1/2 cup) self-raising flour
Instructions:
  • Preheat your oven to 170°C. Line a 20cm square cake pan with non-stick baking paper. In a saucepan over medium-low heat, combine butter, sugar, and honey. Cook and stir for 2-3 minutes until smooth and sugar dissolves. Allow to cool slightly before using.
  • In a large bowl, mix pepitas, Weet-Bix™, sultanas, oats, and flour. Pour in the melted butter mixture and stir until well combined.
  • Spread the mixture evenly in the lined pan, using the back of a spoon to create a smooth surface. Bake in the oven for 25 minutes or until golden. Allow it to cool completely in the pan for 30 minutes, then slice and serve.
