Elevate energy with a delicious muesli slice for a midday pick-me-up in your lunchbox.
Ingredients:
  • 225.00 gm rolled oats
  • 32.50 gm shredded coconut
  • 250.00 ml cornflakes
  • 125.00 ml chopped dried apricots
  • 125.00 ml chopped dried dates
  • 85.00 gm sultanas
  • 125.00 ml chopped glace cherries
  • 250g butter, chopped
  • 45.00 gm firmly packed brown sugar
  • 89.38 gm honey
Instructions:
  • 1. Preheat your oven to 180°C (160°C fan-forced) and grease a 3cm-deep, 18cm x 28cm slice pan. Line it with baking paper, ensuring a 2cm overhang on the long sides. Next, mix together oats, coconut, cornflakes, apricots, dates, sultanas, and cherries in a bowl.
  • In a saucepan over medium-low heat, melt butter with sugar and honey until sugar dissolves. Bring to a boil, then simmer until slightly thickened, about 3 to 4 minutes. Add this to the oats and stir well.
  • Spread the mixture in the prepared pan and bake until golden, then let it cool completely in the pan. Chill in the refrigerator for 1 to 2 hours until firm. Serve and enjoy!
