Highly-rated muesli slice recipe using basic pantry ingredients, perfect for lunchboxes, tea time, or snacks. Easily customizable to your preferences!
Ingredients:
  • 500.00 ml natural untoasted muesli
  • 150.00 gm self-raising flour
  • 125.00 ml dried apricots, roughly chopped
  • 85.00 gm sultanas
  • 135.00 gm brown sugar
  • 180g butter
  • 89.38 gm honey
  • 2 eggs, lightly beaten
  • 100g milk chocolate (optional)
Instructions:
  • Preheat your oven to 180°C. Prepare a 3cm deep, 16cm x 26cm lamington pan by greasing and lining it. In a bowl, mix together muesli, flour, dried fruit, and sugar.
  • In a small saucepan, gently melt butter with honey over low heat, stirring constantly until butter is fully melted. Allow mixture to cool for 5 minutes. Combine the butter mixture and eggs with the muesli mixture, stirring until everything is thoroughly mixed.
  • Smooth the mixture evenly into the prepared lamington pan and bake for 30-35 minutes until a skewer inserted into the center comes out clean. Let it cool in the pan before serving.
  • Melt the chocolate in a heat-proof bowl over simmering water, then transfer it to a snap-lock bag. Cut a corner of the bag and drizzle the chocolate over the slice. Let it set before cutting into squares.
