Ingredients:
  • 2 boxes (13.9 oz) Betty Crocker™ Cinnamon Streusel Muffin & Quick Bread Mix
  • 1 cup chopped peeled apple
  • 1 cup shredded carrot
  • 1 cup chopped walnuts
  • 1 cup flaked coconut
  • 1/2 cup vegetable oil
  • 4 eggs
  • 2 cans (8 oz each) crushed pineapple in juice, undrained
  • 1 cup powdered sugar
  • 2 to 4 teaspoons water
Instructions:
  • Preheat the oven to 400°F. Lightly grease the bottom of a 13x9-inch pan with shortening or cooking spray. In a large bowl, combine both muffin mixes with apple, carrot, walnuts, and coconut. In a separate medium bowl, mix oil, eggs, and pineapple, then blend into the muffin mixture. Spread the mixture evenly in the pan and top with the streusel included in the muffin mixes.
  • Bake for 43 to 45 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 15 minutes.
  • In a small bowl, combine powdered sugar with 2 to 4 teaspoons of water until smooth and thin. Drizzle the mixture over the warm cake.
