Ingredients:
  • 200 g caster sugar
  • 6 cloves
  • 3 star anise
  • 1 cinnamon stick
  • 2 bay leaves
  • 2 oranges
  • 1 lemon
  • 2 x 750 ml bottles of red wine
  • 100 ml crème de cassis
  • 1 whole nutmeg for grating
Instructions:
  • In a large heavy-bottomed pan, combine sugar and all spices (except nutmeg). Add bay leaves and zest of lemon and oranges using a speed peeler. Squeeze in the juice of sliced oranges. Pour in enough wine to cover ingredients. Bring to a boil over medium heat, then simmer until sugar dissolves into a fragrant syrup, about 5 minutes. Stir in remaining wine and crème de cassis, gently heat for 10 minutes without boiling. Serve hot, garnished with freshly grated nutmeg, alongside mince pies.
