Indulge in a festive glass of warm, spiced mulled wine.
Ingredients:
2clementines
1lemon
1lime
200 g caster sugar
6whole cloves
1cinnamon stick
3fresh bay leaves
1whole nutmegfor grating
1vanilla pod
2bottlesChianti or other Italian red wine
2star anise
Instructions:
Peel large sections of peel from the clementines, lemon, and lime using a speed-peeler. In a large saucepan over medium heat, combine sugar, pieces of peel, and clementine juice. Add cloves, cinnamon stick, bay leaves, and nutmeg. Split the vanilla pod and add it to the pan. Pour in just enough red wine to cover the sugar, let it simmer until sugar dissolves, then bring to a boil. Boil for 4 to 5 minutes until a thick syrup forms. Creating this flavorful base allows the sugar and spices to infuse perfectly with the wine. Lower the heat, add star anise and the remaining wine. Gently warm the mulled wine for about 5 minutes, then pour into glasses and serve.
