Indulge in a festive glass of warm, spiced mulled wine.
Ingredients:
  • 2 clementines
  • 1 lemon
  • 1 lime
  • 200 g caster sugar
  • 6 whole cloves
  • 1 cinnamon stick
  • 3 fresh bay leaves
  • 1 whole nutmeg for grating
  • 1 vanilla pod
  • 2 bottles Chianti or other Italian red wine
  • 2 star anise
Instructions:
  • Peel large sections of peel from the clementines, lemon, and lime using a speed-peeler. In a large saucepan over medium heat, combine sugar, pieces of peel, and clementine juice. Add cloves, cinnamon stick, bay leaves, and nutmeg. Split the vanilla pod and add it to the pan. Pour in just enough red wine to cover the sugar, let it simmer until sugar dissolves, then bring to a boil. Boil for 4 to 5 minutes until a thick syrup forms. Creating this flavorful base allows the sugar and spices to infuse perfectly with the wine. Lower the heat, add star anise and the remaining wine. Gently warm the mulled wine for about 5 minutes, then pour into glasses and serve.
