Hearty bean and sausage soup slow-cooked with flavorful veggies.
Ingredients:
  • 1 package (20 ounces) 15- or 16-dried bean soup mix, sorted and rinsed
  • 1/2 pound smoked beef sausage ring, cut into 1/4-inch slices
  • 1 large onion, chopped (1 cup)
  • 10 cups water
  • 1 1/2 teaspoons dried thyme leaves
  • 1/2 teaspoon pepper
  • 2 medium carrots, shredded (1 1/3 cups)
  • 1 can (14 1/2 ounces) diced tomatoes, undrained
Instructions:
  • Combine all the ingredients, excluding the carrots and tomatoes, in a 5- to 6-quart slow cooker.
  • Cook the beans on high heat setting, covered, for 8 to 10 hours until they are tender.
  • Combine the vibrant flavors of carrots and tomatoes into the mix.
  • Cook covered over high heat for approximately 15 minutes or until piping hot.
