Elevate instant ramen with a flavorful mix of mushrooms, kale, and bok choy in a savory soy sauce, balsamic vinegar, and sesame oil dressing.
Ingredients:
  • 3 (3 ounce) packages instant ramen noodles (without flavor packet)
  • 2.5 cups boiling water
  • 3 tablespoons soy sauce
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon minced garlic, or to taste
  • 0.25 teaspoon ground ginger
  • 2 teaspoons vegetable oil
  • 2 cups chopped baby bok choy
  • 0.5 medium onion, chopped
  • 0.33333334326744 cup chopped carrots
  • 0.5 cup chopped cremini mushrooms
  • 0.5 cup chopped shiitake mushrooms
  • 0.5 cup chopped kale
Instructions:
  • Place the ramen bricks in a heat-safe bowl. Pour boiling water over the noodles and allow them to stand until they start to soften and separate.
  • Combine the soy sauce, balsamic vinegar, sesame oil, sugar, garlic, and ginger in a small bowl or glass jar.
  • In a large skillet or wok over medium-high heat, saute bok choy, onion, and carrots in vegetable oil until onion is translucent, about 3 to 5 minutes. Add cremini mushrooms, shiitake mushrooms, and kale, and saute until kale starts to wilt, about 3 to 5 minutes.
  • Separate the ramen noodles with a fork and drain any excess water. Transfer them to a hot skillet. Pour the soy and vinegar sauce over the noodles and vegetables. Stir everything together until the flavors blend, approximately 2 minutes.
