Whip up a hearty mushroom and Cheddar omelet with green onions for a protein-packed breakfast.
Ingredients:
  • 2 eggs
  • 1 tablespoon milk
  • salt and ground black pepper to taste
  • 1 teaspoon coconut oil
  • 2 mushrooms, chopped
  • 1 green onions (green parts only), minced
  • 1 tablespoon shredded Cheddar cheese, or to taste
Instructions:
  • Combine eggs, milk, salt, and pepper in a bowl and whisk until well blended.
  • In a skillet over medium heat, sauté mushrooms in oil until softened, about 5 minutes. Add green onions and cook for an additional minute. Pour in beaten eggs and cook until edges harden, 2 to 3 minutes. Flip, sprinkle Cheddar cheese, and continue cooking until set, 1 to 2 minutes. Fold omelet in half and add more Cheddar cheese on top before serving.
