Ingredients:
  • 200g cup mushrooms, sliced
  • 1 lemon, rind finely grated
  • 1 x 300g focaccia bread, halved, split
  • 60g mixed salad leaves
  • 60g feta, crumbled
Instructions:
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat. Add mushrooms and cook for 2 to 3 minutes until tender. Stir in lemon rind, season with salt and pepper.
  • While lightly grilling or toasting both sides of the focaccia, combine the remaining oil and garlic. Brush this mixture over the focaccia bases, then top with salad leaves, mushrooms, feta, and the focaccia tops before serving.
