Mushroom and parmesan pizza

Try this delicious gourmet vegetarian and gluten-free pizza recipe!
Ingredients:
  • 1 quantity gluten-free pizza dough (see related recipe)
  • 27.30 gm olive oil
  • 125.00 ml or Mil Lel pizza cheese
  • 200g mixed mushrooms (we used Swiss brown, enoki and shiitake), halved
  • 80g baby rocket
  • 62.50 ml shaved parmesan cheese or vegetarian hard cheese
Instructions:
  • Prepare the pizza dough and preheat the oven to 220°C/200°C fan-forced. Divide the dough into two portions and shape them into 25cm circles. Transfer each circle onto a tray. Brush each circle with 1 tablespoon of oil and sprinkle with pizza cheese. Bake for 10 minutes, or until the cheese is melted and the base is crispy.
  • Heat the rest of the oil in a hot frying pan, add mushrooms, and sauté for 3 to 4 minutes until golden. Take the pizza out of the oven, top with the sautéed mushrooms, arugula, and parmesan, and serve.
