Indulgent risotto with Pecorino cheese, mushrooms, and peas - a creamy and flavorful vegetarian main dish.
Ingredients:
  • 4 cups vegetable broth
  • 4 cups low-sodium vegetable broth
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter, divided
  • 1 medium yellow onion, minced
  • 4 cloves garlic, crushed and minced
  • 0.5 teaspoon red pepper flakes
  • sea salt and cracked black pepper to taste
  • 2 cups cremini mushrooms, sliced
  • 0.75 cup shiitake mushrooms, sliced
  • 1 teaspoon chopped fresh thyme
  • 0.5 teaspoon ground thyme
  • 2 cups Arborio rice
  • 1 large bay leaf
  • 0.5 cup dry white wine
  • 1 cup frozen peas
  • 1 cup shredded Pecorino Romano cheese
  • 0.33333334326744 cup chopped fresh parsley
Instructions:
  • In a medium pot over medium heat, gently bring regular and low-sodium vegetable broth to a simmer. Reduce the heat slightly to keep it warm.
  • In a 12-inch skillet over medium heat, warm olive oil and 1 tablespoon of butter. Add onion, garlic, pepper flakes, a pinch of salt, and pepper. Cook, stirring frequently, for 3 to 4 minutes.
  • Sauté cremini and shiitake mushrooms with fresh and dried thyme, and a generous pinch of salt and pepper until mushrooms release liquid and caramelize, about 5 minutes. Set aside cooked vegetables on a plate.
  • Melt the remaining butter in the skillet. Toast the Arborio rice until it gives off a nutty aroma and lightens in color, approximately 2 minutes. Add the bay leaf, pour in the wine, and stir until the liquid is absorbed, about 3 minutes.
  • Ladle hot broth into the skillet and stir until absorbed, about 2 to 3 minutes. Repeat this step with additional broth until the risotto is almost done, around 15 minutes total. Stir in frozen peas and cooked vegetables with the last ladle of broth.
  • Take off the heat once the liquid is absorbed and the rice is perfectly tender with a slight firmness. Mix in the flavorful Pecorino Romano cheese and vibrant parsley. Taste and season with salt and pepper as desired.
