Pea and Mushroom Lasagna Ribbons

Quick and easy microwave lasagna featuring frozen peas, mushrooms, and jarred sauce for a simple and delicious Italian meal.
Ingredients:
  • 6 uncooked lasagna noodles
  • 1 bag (12 oz) frozen lightly seasoned garlic baby peas & mushrooms
  • 1 container (15 oz) part-skim ricotta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups caramelized onion and roasted garlic pasta sauce
  • Shredded Parmesan cheese, if desired
Instructions:
  • Prepare and cook the noodles according to the package instructions. At the same time, heat the vegetables in the microwave according to the package instructions and drain. In a medium bowl, combine the cooked vegetables with ricotta cheese, salt, and pepper.
  • 1. Prepare a microwave-safe 11x7-inch dish with cooking spray. 2. Spread 1 cup of pasta sauce evenly in the dish. 3. Place 1 noodle on your work surface. 4. Spoon 2 tablespoons of vegetable mixture onto one end of the noodle. 5. Fold the entire noodle over the filling, starting from the opposite end. 6. Spoon another 2 tablespoons of filling onto the folded noodle. 7. Fold the noodle back in the opposite direction from where you started. 8. Repeat the process by adding 2 tablespoons of filling onto the folded noodle. 9. Continue folding the noodle, creating a zigzag pattern. 10. Using a wide spatula, transfer the filled noodle onto the sauce in the dish. 11. Repeat the process with the remaining noodles and vegetable mixture.
  • Drizzle the remaining sauce over the noodles. Cover the baking dish with microwave-safe plastic wrap, leaving one corner slightly open. Microwave on High for 6 minutes or until hot. Finish by sprinkling with Parmesan cheese.
