Ingredients:
  • 175.00 gm rolled oats
  • 500g Cottage Cheese
  • 1 egg
  • 21.00 gm soy sauce
  • 2 tsp dried mixed herbs
  • 250.00 ml dried breadcrumbs
  • 57.50 gm walnuts, toasted
  • 200g cup mushrooms, finely diced
  • 2 stalks celery (including leaves), finely diced
  • 113.75 gm olive oil
  • 600ml bottle Italian tomato pasta sauce
  • 40.00 ml oregano leaves
  • 120g mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 180°C. In a food processor, blend oats, cheese, egg, soy sauce, and dried herbs until well combined. Add breadcrumbs and walnuts, pulsing until mixed. Transfer the mixture to a bowl.
  • Combine the mushrooms and celery with the oat mixture. Form the mixture into 2cm-thick patties using 2 tablespoons at a time.
  • Heat 2 tablespoons of oil in a sturdy frying pan over medium heat. Sear the patties in batches for 2 to 3 minutes on each side until they turn golden. Place them in a 5cm deep, 26cm (base) square baking dish and cover to keep warm while you cook the rest of the patties, adding more oil if needed.
  • Cover the patties with a generous amount of pasta sauce and sprinkle half of the oregano. Bake uncovered for about 30 minutes until patties are fully cooked. Season with salt, pepper, and the remaining oregano before serving alongside a fresh salad.
