Mushroom and Walnut Appetizers

Indulge in savory cheesy mushroom appetizers with a hint of spinach, made using Original Bisquick® mix.
Ingredients:
  • 1 package (8 oz) fresh whole mushrooms, sliced (3 cups)
  • 1 cup chopped onion
  • 1 clove garlic, finely chopped
  • 2 tablespoons butter or margarine
  • 2 cups shredded Swiss cheese (8 oz)
  • 1 1/2 cups coarsely chopped walnuts
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain
  • 1 1/3 cups milk
  • 3 eggs
  • 3/4 cup Original Bisquick™ mix
  • 1 1/2 teaspoons salt
Instructions:
  • Preheat the oven to 400°F. Grease a 13x9-inch pan with cooking spray. In a 10-inch skillet, sauté mushrooms, onion, and garlic in butter over medium heat for about 5 minutes until the onion is tender; then drain any excess liquid.
  • Combine the mushroom mixture, cheese, walnuts, and spinach in a pan, spreading evenly. In a medium bowl, whisk all other ingredients together until blended, then pour into the pan.
  • Bake for 25-30 minutes until a knife inserted in the center comes out clean. Let it cool for 30 minutes, then cut into 9 rows by 3 rows to serve.
