Elevate your holidays with savory stuffed mushrooms filled with shallots, garlic, walnuts, breadcrumbs, and Parmesan. Bake to perfection for a delicious appetizer.
Ingredients:
  • 18 to 24 button or cremini mushrooms, scrubbed clean, stems separated from the caps, stems finely chopped
  • 1 tablespoon butter
  • 2 small shallots, minced, about 2 tablespoons
  • 1 large garlic clove, minced
  • 2 tablespoons chopped walnuts
  • Salt
  • 2 tablespoons chopped parsley
  • 1 teaspoon Herbes de Provence or dried thyme
  • 2 tablespoons breadcrumbs
  • 2 tablespoons sherry or chicken stock
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • To make the filling, melt 1 tablespoon of butter in a small frying pan over medium-high heat. Cook the chopped mushroom stems and shallots for 4 to 5 minutes, stirring frequently. Incorporate the garlic, walnuts, and a sprinkle of salt. Cook for an additional 2 minutes. Remove from heat and mix in parsley, herbes de Provence, and breadcrumbs. Transfer contents to a food processor with sherry, then pulse until you achieve a fine, paste-like mixture.
  • Prepare mushroom caps by coating them with olive oil. Fill each mushroom with the stuffing and arrange them on a baking sheet. Generously top each mushroom with grated Parmesan cheese.
  • Bake at 375°F (190°C) for 10-20 minutes until cheese is slightly browned and liquid starts to collect at the base of each mushroom. Let cool for about 5 minutes before serving. Enjoy the dish? Share your feedback and leave a rating below!
