Whip up a delicious mushroom omelette for a hearty breakfast.
Ingredients:
  • 10g (2 tsp) butter
  • 2 mushroom fiats, sliced
  • 1 small garlic clove, crushed
  • 2 eggs
  • 20.00 gm water
  • Salt & ground black pepper, to taste
  • 2 green shallots, chopped
  • 2 tsp coarsely chopped fresh parsley
Instructions:
  • In a medium frying pan over medium heat, melt half of the butter until foamy. Add the mushrooms and garlic, and cook while stirring with a wooden spoon for about 4 minutes, or until the mushrooms are tender and slightly caramelized. Transfer the cooked mushrooms to a separate dish and set aside.
  • Whisk eggs, water, a pinch of salt, and pepper together gently in a bowl.
  • Add the rest of the butter to the pan and heat over medium heat until foamy. Stir in the green shallots and cook for 30 seconds, then spread them evenly across the pan.
  • Pour the egg mixture into the pan, swirling it to coat the bottom and cover the green shallots. Sprinkle with parsley, cover with a lid or foil, and cook over medium heat for 2 minutes until just set. Give the pan a gentle shake to make sure the omelette is not sticking to the base.
  • Spread the mushrooms on half of the omelette, then carefully slide the omelette onto a serving plate, folding the other half over the mushrooms. Serve promptly with bread and a fresh green salad, if preferred.
