Mushroom Pie

Transformed traditional Russian stuffing into a heavenly pie.
Ingredients:
  • 1 (10 ounce) package fresh mushrooms, sliced
  • 1 large onion, chopped
  • 4 slices bacon, chopped
  • 0.75 cup heavy cream
  • 1 cup shredded Swiss cheese
  • salt and pepper to taste
  • 1 teaspoon chopped fresh dill
  • 1 (17.25 ounce) package frozen puff pastry, thawed
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium-high heat, heat oil and sauté mushrooms, onion, and bacon for 5 minutes until tender. Reduce heat to medium, then add cream and dill, and cook for 10 more minutes. Remove from heat and stir in cheese.
  • Lay a sheet of puff pastry on a greased baking sheet, spoon on the mushroom filling, top with the other sheet, and press to seal. Use a fork to create vent holes, then brush with beaten egg.
  • Bake in a preheated oven for approximately 40 minutes until golden brown. Allow to cool, then slice into squares before serving.
