Quick and flavorful creamy mushroom soup, perfect as a main dish or appetizer with crusty bread.
Ingredients:
  • 500g thinly sliced mushrooms
  • 23.40 gm Dijon mustard
  • 125ml thickened cream
Instructions:
  • In a large saucepan over medium heat, sauté the onion until softened, about 5 minutes. Add the mushrooms and cook until tender, about 5 minutes. Stir in mustard, then pour in the stock and bring to a simmer. Let it cook for 15 minutes until heated through and slightly thickened. Allow the soup to cool slightly before serving.
  • Blend the mixture with a stick blender until smooth, then gently fold in half of the cream. Season to taste.
  • Divide soup into bowls and finish with a luscious cream drizzle.
