Savory mushroom cups with creamy filling, Parmesan topping on toast for a delicious hot appetizer.
Ingredients:
  • 1.5 (1 pound) loaves sliced white bread
  • 2 tablespoons butter
  • 0.5 pound fresh mushrooms, finely diced
  • 0.5 cup onion, finely diced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon ground cayenne pepper
  • 0.5 cup half-and-half
  • 1 tablespoon all-purpose flour
  • 0.5 cup Parmesan cheese, grated
Instructions:
  • Heat the oven to 400°F (200°C).
  • Cut rounds out of bread using a small cookie cutter, then press them into ungreased mini muffin tins.
  • Bake in the preheated oven for 8-9 minutes until golden brown, keeping a close eye as they bake quickly. Remove the bread cups from the oven and allow them to cool.
  • In a large skillet, melt butter over medium heat. Sauté mushrooms and onion in the butter until soft, about 8 minutes. Season with parsley, lemon juice, salt, pepper, and cayenne pepper. Add half-and-half and gradually stir in flour until thickened.
  • Fill the bread cups generously with the savory mushroom mixture, sprinkle each with a generous amount of flavorful Parmesan, and arrange them neatly on a lightly greased baking sheet.
  • Bake in the oven until the cheese is gooey and bubbly, for about 10-12 minutes.
