Elevate your brunch with savory garlic mushrooms in crispy, buttery toast cups.
Ingredients:
  • 1 tablespoon butter
  • 12 ounces sliced mushrooms
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons softened butter
  • 6 firm white or wheat bread, crusts removed
  • 3 eggs, beaten
  • 2 tablespoons cream
  • 3 tablespoons freshly grated Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium-high heat, melt 1 tablespoon of butter until sizzling. Stir in garlic and cook for 30 seconds until fragrant. Add mushrooms and cook until softened and lightly browned, about 4 to 6 minutes. Season with salt and pepper, then allow to cool.
  • Spread a generous amount of softened butter onto one side of each slice of bread. Gently press the buttered side into a muffin tin and leave it aside for later.
  • Combine eggs and cream, blend in the cooled mushroom mixture. Fill each toast cup with the custard mixture. Top with grated Parmesan cheese.
  • Bake in a hot oven until the egg mixture firms up and the tops turn a beautiful golden brown, approximately 20 minutes.
