Mushroom-filled baked onions

Elevate your dish with exquisite bacon & mushroom stuffed onions.
Ingredients:
  • 4 (220g each) brown onions, unpeeled
  • 125.00 ml fresh white breadcrumbs
  • 2 rashers rindless bacon, finely chopped
  • 125g cup mushrooms, finely chopped
  • 20.00 ml tarragon leaves, finely chopped
Instructions:
  • In a large saucepan, submerge onions in cold water and bring to a boil over high heat. Reduce to medium heat and gently simmer for 25 to 30 minutes until tender. Drain and let cool.
  • 1. Preheat the oven to 200°C. 2. Peel and halve the onions lengthways. Remove the centers to create cavities. 3. Arrange the onion halves, cut side up, in a lightly greased roasting pan.
  • Dice the onion. Combine the diced onion with breadcrumbs, bacon, mushrooms, and tarragon in a bowl. Season with salt and pepper, then mix well. Fill the onion halves with the mixture. Bake for 20-25 minutes until golden. Enjoy with roast beef or chicken.
